Chicken wings are great if you are cooking on a budget. Try them with this homemade coleslaw for a fuss-free dinner.
Ingredients
- For the chicken wings
- 140g/5oz tomato purée
- 2 tbsp runny honey
- 1 tbsp cumin
- 1 tbsp vinegar
- 1 tsp paprika
- 600g/1lb 5oz chicken wings
- drizzle of vegetable oil
- For the slaw
- ½ white or red cabbage
- 3 carrots, peeled
- ½ lemon, juice only
- 1 tbsp oil
Preparation method
- Preheat the oven to 200C/180C Fan/Gas 6.
- In a large bowl, mix together all the chicken wing ingredients except for the wings themselves.
- Remove the tips from the wings and halve at the knuckle. Add the wings to the bowl and toss really well until each wing is completely coated.
- Put the wings on a large oven tray in a single layer. Drizzle with a little oil and pop in the oven. Bake for 20 minutes or until completely cooked through and golden-brown, turning half way through.
- Meanwhile, make the slaw. Using the large holes of a box grater, grate the cabbage and carrots into a large mixing bowl. Add the remaining ingredients to the bowl along with a pinch of salt and pepper. Toss well.
- Serve the wings with the slaw on the side and lots of napkins!
